Elderflower Champagne!

If you are coming to stay with us in the next few weeks why not pick some Elderflower. Last year we made Elderflower cordial which was delicious. This year I fancied a change and found this lovely recipe for Elderflower champagne in a wonderful book called “A greener Life” written by Clarissa Dickson Wright and Johnny Scott. Enjoy…………..Makes 4 Litres.
15 Elderflower heads, 700g of unrefined sugar or honey, 2 lemons, juice and zest, 4 litres of boiling water. Pick the elderflower heads when they are in full bloom,on a warm day when the scent is at its best. Remove any leaves and twigs and shake out any insects that may be feeding on the nectar. Place in a crock and scatter the sugar or honey over the flowers. Add the lemon juice and zest to the crock. Pour over the boiling water and stir well. Leave to cool for at least 24 hours, stirring occasionally.Sieve through muslin and decant into sterile screw-top bottles. Leave for a fortnight and drink over the following 3-4 weeks.
