Southlands Strawberries

Harvesting the most yummy strawbugs as we call them! Now making jam. Just strawberries, lemon juice and sugar so satisfying to think this will see us through those dark winter mornings with lashings of butter on hot toast!
Mummy’s Strawberry Jam!
(Forgotten skills of cooking by Darina Allen)
1.8kg(4 Lb)unblemished strawberries
Juice of 2 lemons
1.6kg(3 1/2 Lb) granulated sugar
Put the strawberries and lemon juice in a stainless-steel saucepan and cover with the sugar.Leave overnight.Next day, bring to the boil and stir until the sugar is dissolved. Mash some of the berries with a potato masher. Continue to boil until it reaches a set – about 30 minutes. Pour into sterilised jars, (I pop mine in the Aga warming oven and boil the lids in a pan) Cover immediately and store in a cool dry and dark cupboard.

Just finished a second batch.Now we have about 30 jars, labeled by Rosie ready to go in our shop.
