We have just collected a new batch of our own delicious rare breed beef and sausages. I was recently reminded of a recipe Mum used to make for us ‘ Beef olives’ and so I set too to reconstruct her recipe and childhood memories of wonderful meals that definitely hit the comfort food spot!
You will need:
1 Half kilo pack containing 2 large slices of Southlands Farm Dexter beef frying steak.
1 Half kilo pack (6) of Southlands Farm Kune kune sausages.
2 medium white onions finely chopped.
10 or more mushrooms sliced.
2-3 cloves of garlic chopped.
2 cups beef stock
2 cups red wine
(You can also add chopped celery, carrot, parsnips if you wish)
Firstly gently slit down the side of the sausages with a sharp knife and remove the skins.
Place the 2 slices of beef out flat on a chopping board cover with a freezer bag and bash with a steak hammer all over. (The bag just stops it from splashing everywhere!) Then grind black pepper and salt over steak. Cut each steak into three strips and roll each strip around a sausage. Place the six steak wrapped sausages in a roasting tin evenly spaced out. Pour the stock ,wine, chopped garlic and chopped onion around the beef olives. Cover with a lid or foil and cook for 1.5 -2 hours in approx gas mark 5 (second oven of a 4 door Aga) Half way through cooking spoon the liquid stock over sausages.The great thing is you can prepare this all in the morning quite quickly then just pop in the oven in the evening, perfect for a supper party.
Serve with green beans or roast peppers stuffed with tomatoes and topped with cheese
work well and definitely a massive dollop of buttery mash…..a little bit of nostalgic heaven! You can also stir in some single cream for a richer sauce. Enjoy!
